Beyond the blue waters and jumping dolphins of Chilika Lake lies a story that rarely gets told about the Chilika Buffaloes, a unique semi-aquatic breed found exclusively in Odisha's saline marshes. Unlike ordinary cattle, these "Water Warriors" are specialized to dive up to 10 feet deep into the lake to graze on submerged aquatic weeds, a remarkable adaptation that allows them to thrive in brackish water environments. This natural saline diet results in incredibly rich milk with a fat content of up to 12%, which is the secret ingredient behind the authentic taste and texture of Puri’s legendary Chhena and Khoa. However, as the lake's ecosystem changes and their habitat shrinks, this rare breed is slowly disappearing, making it more important than ever to recognize and protect this vital part of India’s biological heritage.
